Pumpkin Spice Coffee Recipe: Low Calorie Version

There’s nothing like a little pumpkin flavor to brighten up a fall day. This recipe for pumpkin spice coffee is my variation on a classic, adjusted to suit my taste and my diet. This pumpkin spice coffee drink has a strong pumpkin flavor and a low calorie profile.

Pumpkin Spice Coffee Recipe: (serves 1)

  • 1/2 cup skim milk
  • 1/2 cup strong coffee or espresso
  • 1 tbsp pureed pumpkin (typically sold in a can)
  • 1 tbsp Splenda brand sweetener (sucralose)
  • 1/2 tsp pumpkin pie spice
  • dollop of frozen whipped topping
  • pinch of cinnamon

Combine the coffee, milk, spice and pumpkin in a saucepan and whisk vigorously over medium heat until thoroughly mixed. Do not boil the mixture. When all components have combined, remove from heat and add sweetener. Pour into a mug, place a dollop of whipped topping and sprinkle a dash of cinnamon on top. Serve immediately.

It’s a simple drink to prepare but the result is a warm treat perfect for cool days!
